A creamy chocolate chip cheesecake topped with colorful Lucky Charms marshmallows.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 cup Lucky Charms marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Pour in melted butter and mix until well combined. Press mixture evenly into the bottom of a 9-inch springform pan.
- Bake the crust for 8-10 minutes. Remove from oven and let cool.
- In a large bowl, beat cream cheese and 1 cup sugar with an electric mixer until smooth. Beat in flour until just combined.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Fold in chocolate chips.
- Pour the cream cheese mixture over the prepared crust.
- Bake for 50-60 minutes, or until the center is almost set.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove from oven and let cool completely on a wire rack.
- Once cooled, sprinkle the Lucky Charms marshmallows over the top of the cheesecake.
- Chill for at least 4 hours before serving.
Notes
- For a smoother cheesecake, ensure your cream cheese and eggs are at room temperature.
- You can separate the Lucky Charms marshmallows from the cereal before using.
