Description

A creamy chocolate chip cheesecake topped with colorful Lucky Charms marshmallows.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup Lucky Charms marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Pour in melted butter and mix until well combined. Press mixture evenly into the bottom of a 9-inch springform pan.
  3. Bake the crust for 8-10 minutes. Remove from oven and let cool.
  4. In a large bowl, beat cream cheese and 1 cup sugar with an electric mixer until smooth. Beat in flour until just combined.
  5. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  6. Fold in chocolate chips.
  7. Pour the cream cheese mixture over the prepared crust.
  8. Bake for 50-60 minutes, or until the center is almost set.
  9. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  10. Remove from oven and let cool completely on a wire rack.
  11. Once cooled, sprinkle the Lucky Charms marshmallows over the top of the cheesecake.
  12. Chill for at least 4 hours before serving.

Notes

  • For a smoother cheesecake, ensure your cream cheese and eggs are at room temperature.
  • You can separate the Lucky Charms marshmallows from the cereal before using.
