  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together eggs, buttermilk, hot coffee, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until smooth.
  5. Divide batter evenly between the prepared pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let cakes cool in pans for 10 minutes, then invert onto a wire rack to cool completely.
  8. For the blackberry filling, combine blackberries, 1/2 cup sugar, and lemon juice in a saucepan. Cook over medium heat, stirring occasionally, until berries break down and mixture thickens, about 15-20 minutes. Let cool completely.
  9. For the chocolate frosting, beat softened butter until creamy. Gradually add powdered sugar and cocoa powder, alternating with milk, until smooth and spreadable. Stir in vanilla extract.
  10. Place one cake layer on a serving plate. Spread the blackberry filling over the cake. Top with the second cake layer.
  11. Frost the top and sides of the cake with chocolate frosting.
