- 1/4 cup fresh lime juice
- 1 tablespoon honey
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup chopped cilantro
Instructions
- Toss shrimp with olive oil, chili powder, cumin, and salt in a bowl.
- Heat a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and cooked through.
- In a small bowl, whisk together lime juice and honey to make the dressing.
- In a large bowl, combine mixed greens, cherry tomatoes, and red onion.
- Add the cooked shrimp to the salad mixture.
- Drizzle the lime dressing over the salad and toss gently to coat.
- Sprinkle with chopped cilantro before serving.
