Ingredients

- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- For the Vinaigrette:
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the chickpeas, cherry tomatoes, diced cucumber, and sliced red onion.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
- Pour the vinaigrette over the chickpea and vegetable mixture.
- Add the chopped fresh parsley and toss gently to combine.
- Serve immediately or chill for later.
Notes
- For extra flavor, add feta cheese or Kalamata olives.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
