Description
A quick and easy skillet meal featuring chicken and mushrooms in a creamy Asiago and mustard sauce.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 2 tablespoons Dijon mustard
- 1/4 cup grated Asiago cheese
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add mushrooms to the skillet and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Reduce heat to low and stir in heavy cream, Dijon mustard, and Asiago cheese.
- Return chicken to the skillet and stir to coat in the sauce.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
- Serve over pasta, rice, or with crusty bread.
- You can substitute other types of mushrooms for cremini.
- Adjust the amount of Dijon mustard to your preference.
