- 1 pound chicken breasts, cut into strips
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 8 ounces pasta (such as penne or rotini)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add bell pepper and onion to the skillet and cook until softened, about 5-7 minutes. Add garlic, chili powder, cumin, paprika, and cayenne pepper (if using) and cook for 1 minute more.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2-3 minutes.
- Reduce heat to low and stir in heavy cream. Simmer for 5 minutes, or until sauce has thickened slightly.
- Return chicken to the skillet. Add cooked pasta and toss to combine. Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
Notes
- Adjust the amount of cayenne pepper to your desired level of spice.
- You can substitute other vegetables like zucchini or mushrooms.
