Ingredients

  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup chopped cooked chicken
  • 1 cup chopped cooked ham
  • 1 cup cubed Swiss cheese
  • 1/2 cup heavy cream
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and celery and cook until softened, about 5-7 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Stir in flour and cook for 1 minute.
  5. Gradually whisk in chicken broth until smooth.
  6. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  7. Add chicken, ham, and Swiss cheese.
  8. Stir until cheese is melted.
  9. Stir in heavy cream and season with salt and pepper.
  10. Heat through but do not boil.
  11. Serve hot.

Notes

  • You can use leftover cooked chicken or a rotisserie chicken.
  • Adjust the amount of ham and cheese to your liking.
  • For a thicker soup, use more flour.
