Description

A meatloaf twist on classic chicken cordon bleu, featuring chicken, ham, and cheese.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1/4 cup chopped ham
  • 1/4 cup shredded Swiss cheese
  • Salt and pepper to taste
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, milk, egg, onion, garlic, salt, and pepper. Mix until just combined.
  3. Pat half of the chicken mixture onto the prepared baking sheet in a rectangle shape.
  4. Layer the ham and cheese over the chicken mixture, leaving a small border around the edges.
  5. Top with the remaining chicken mixture, sealing the edges to form a loaf.
  6. In a small bowl, whisk together Dijon mustard and honey.
  7. Brush the mustard mixture over the top of the meatloaf.
  8. Bake for 40-45 minutes, or until cooked through and the internal temperature reaches 165 degrees F (74 degrees C).
  9. Let stand for 5 minutes before slicing and serving.

Notes

  • You can use different types of cheese, such as provolone or Gruyere.
  • Add a pinch of nutmeg to the chicken mixture for extra flavor.
  • Serve with a side of mashed potatoes or green beans.
