Ingredients

  • 1 pound boneless, skinless chicken breast, thinly sliced
  • 2 tablespoons soy sauce, divided
  • 1 tablespoon cornstarch, divided
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 1 cup sliced mushrooms
  • 8 ounces chow mein noodles
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon white pepper

Instructions

  1. In a bowl, toss chicken with 1 tablespoon soy sauce and 1/2 tablespoon cornstarch.
  2. Heat vegetable oil and sesame oil in a wok or large skillet over high heat. Add chicken and stir-fry until browned and cooked through. Remove chicken from wok and set aside.
  3. Add broccoli, carrots, celery, and mushrooms to the wok. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  4. Add garlic and ginger to the wok and stir-fry for 30 seconds until fragrant.
  5. In a small bowl, whisk together chicken broth, remaining 1 tablespoon soy sauce, oyster sauce, hoisin sauce, remaining 1/2 tablespoon cornstarch, sugar, and white pepper to make the sauce.
  6. Return chicken to the wok with the vegetables.
  7. Add cooked chow mein noodles to the wok.
  8. Pour the sauce over the noodles, chicken, and vegetables. Toss everything together until well combined and heated through.
  9. Serve immediately.

Notes

  • For extra flavor, marinate the chicken for at least 30 minutes.
  • Feel free to add other vegetables like bell peppers or snap peas.
