Ingredients

  • 1 lb pasta
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 6 slices bacon, chopped
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add chopped bacon to the same skillet and cook until crispy. Remove bacon and set aside, leaving drippings in the skillet.
  4. Add minced garlic to the skillet and cook for about 1 minute until fragrant.
  5. Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes until slightly thickened.
  6. Stir in Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper.
  7. Return the cooked chicken and bacon to the skillet. Add the drained pasta.
  8. Toss everything together to coat the pasta and ingredients in the sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  9. Serve immediately, garnished with fresh parsley.

Notes

  • For a spicier kick, add red pepper flakes with the garlic.
  • You can substitute chicken thighs for chicken breast.
  • Other vegetables like spinach or mushrooms can be added.
