Ingredients

- 2 cups cooked chicken, shredded
- 2 cups chicken broth
- 1 cup milk
- 1 cup all-purpose flour
- 2 tbsp butter
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 cup frozen peas and carrots (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix flour, baking powder, salt, pepper, garlic powder, and onion powder.
- Cut in butter until the mixture resembles coarse crumbs.
- Stir in milk until just combined to form the dumpling dough.
- In a baking dish, layer shredded chicken and optional vegetables.
- Pour chicken broth over the chicken.
- Drop spoonfuls of dumpling dough on top.
- Bake for 25-30 minutes until dumplings are golden and cooked through.
Notes
- Use rotisserie chicken for quick prep.
- Add more broth if you prefer a saucier casserole.
