Description

Chicken Alfredo Lasagna Rolls are a creamy, cheesy twist on classic lasagna, filled with shredded chicken, spinach, and rich Alfredo sauce, baked to perfection in individual roll-ups.


Ingredients

  • 1012 lasagna noodles, cooked and cooled
  • 2 cups cooked, shredded chicken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 1/2 cups chopped fresh spinach (or thawed frozen, squeezed dry)
  • Salt, pepper, and Italian seasoning to taste
  • Extra mozzarella cheese for topping
  • Breadcrumbs for topping (optional)
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 1/2 cups freshly grated Parmesan cheese (for Alfredo sauce)
  • Salt and pepper, to taste
  • Pinch of nutmeg (optional)

Instructions

  1. Cook lasagna noodles in salted water until al dente. Drain and lay flat to cool.
  2. In a saucepan, melt butter and sauté garlic until fragrant. Add heavy cream and bring to a simmer. Stir in Parmesan, salt, pepper, and nutmeg. Simmer until thickened. Set aside.
  3. In a bowl, mix chicken, ricotta, mozzarella, Parmesan, egg, spinach, and seasonings until well combined.
  4. Spread a layer of Alfredo sauce in the bottom of a greased 9×13 baking dish.
  5. Spread chicken mixture onto each noodle and roll tightly. Place seam-side down in the baking dish.
  6. Top with remaining Alfredo sauce, extra mozzarella, and breadcrumbs if using.
  7. Cover with foil and bake at 375°F for 20–25 minutes. Uncover and bake an additional 10–15 minutes until golden and bubbly.
  8. Let cool for 5–10 minutes before serving. Garnish with parsley if desired.

Notes

  • Use rotisserie chicken to save prep time.
  • Let rolls rest after baking for easier serving.
  • Add red pepper flakes to the filling for a little heat.
  • Make ahead and refrigerate before baking for up to 24 hours.
  • Freeze baked or unbaked rolls for up to 3 months.
