A moist and flavorful bundt cake with cherries and a surprise filling.
Ingredients

- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 3 eggs
- 1 cup milk
- 1 tsp vanilla extract
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups pitted cherries, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a bundt pan.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, beat butter and sugar until fluffy. Add eggs one at a time.
- Alternately add flour mixture and milk to the butter mixture. Stir in vanilla.
- Fold in chopped cherries.
- In a small bowl, mix cream cheese and powdered sugar.
- Pour half the batter into the pan. Spoon cream cheese mixture over it. Add remaining batter.
- Bake for 50-55 minutes. Let cool before serving.
Notes
- Use fresh or frozen cherries.
- Dust with powdered sugar before serving.
- Store in an airtight container for up to 3 days.
