Description

Quick and easy ground beef tacos with a cheesy Rotel kick.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (10 ounces) Rotel diced tomatoes with green chilies, undrained
  • 1/2 cup shredded cheddar cheese
  • 8 taco shells
  • Optional toppings: shredded lettuce, diced tomatoes, sour cream, salsa

Instructions

  1. Brown ground beef in a skillet over medium-high heat. Drain off any excess grease.
  2. Stir in taco seasoning and Rotel tomatoes. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  3. Stir in shredded cheddar cheese until melted.
  4. Warm taco shells according to package directions.
  5. Fill taco shells with the beef mixture.
  6. Add your favorite toppings.

Notes

  • For a spicier taco, use the “hot” Rotel variety.
  • You can substitute ground turkey or chicken for ground beef.
