Quick and easy ground beef tacos with a cheesy Rotel kick.
Ingredients

- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (10 ounces) Rotel diced tomatoes with green chilies, undrained
- 1/2 cup shredded cheddar cheese
- 8 taco shells
- Optional toppings: shredded lettuce, diced tomatoes, sour cream, salsa
Instructions
- Brown ground beef in a skillet over medium-high heat. Drain off any excess grease.
- Stir in taco seasoning and Rotel tomatoes. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Stir in shredded cheddar cheese until melted.
- Warm taco shells according to package directions.
- Fill taco shells with the beef mixture.
- Add your favorite toppings.
Notes
- For a spicier taco, use the “hot” Rotel variety.
- You can substitute ground turkey or chicken for ground beef.
- Prepare the filling ahead of time and reheat before serving.
