Description

A simple recipe for a savory tortilla filled with cheese, jalapenos, and onions.


Ingredients

  • 4 flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup finely chopped white onion
  • 1/4 cup sliced jalapenos (seeds removed for less heat)
  • 1 tablespoon butter

Instructions

  1. Heat a dry skillet over medium heat.
  2. Place one tortilla in the skillet.
  3. Sprinkle half of the cheese, half of the onion, and half of the jalapenos over the tortilla.
  4. Top with a second tortilla.
  5. Cook for 2-3 minutes per side, pressing gently with a spatula, until the cheese melts and the tortillas are golden brown.
  6. Remove from the skillet and set aside.
  7. Wipe the skillet clean.
  8. Melt half the butter in the skillet.
  9. Place the remaining two tortillas in the skillet.
  10. Repeat the filling process with the remaining ingredients.
  11. Cook until golden brown and cheese is melted.
  12. Cut each assembled tortilla in half before serving.

Notes

  • Adjust the amount of jalapenos based on your preferred spice level.
  • You can substitute Monterey Jack cheese with cheddar or a Mexican blend.
