Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 1 1/2 cups orzo pasta
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Drain excess fat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes and beef broth. Bring to a simmer.
  5. Stir in the orzo pasta. Cover and cook for 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed, stirring occasionally.
  6. Remove from heat. Stir in the cheddar and mozzarella cheeses until melted and combined.
  7. Season with salt and pepper to taste. Serve immediately.
