- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 8 ounces rotini pasta, uncooked
- 1/2 cup chopped bell pepper (any color)
- 1/4 cup chopped onion
- 2 cloves garlic, minced
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces, Cajun seasoning, salt, and pepper. Cook until browned on all sides, about 5-7 minutes.
- Add uncooked rotini pasta, chicken broth, heavy cream, bell pepper, onion, and garlic to the skillet. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until pasta is tender and most of the liquid has been absorbed, stirring occasionally.
- Stir in cheddar cheese and Monterey Jack cheese until melted and the sauce is creamy.
- Serve immediately.
Notes
- Adjust Cajun seasoning to your spice preference.
- You can add other vegetables like corn or peas.
- For a spicier dish, add a pinch of cayenne pepper.
