Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup rotini pasta
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes.
  4. Add garlic, Cajun seasoning, smoked paprika, and cayenne pepper (if using) and cook for 1 minute until fragrant.
  5. Stir in diced tomatoes and chicken broth. Bring to a simmer.
  6. Add rotini pasta to the skillet. Cover and cook for 12-15 minutes, or until pasta is al dente, stirring occasionally.
  7. Return chicken to the skillet. Stir in cheddar cheese and Monterey Jack cheese until melted and creamy.
  8. Season with salt and black pepper to taste.
  9. Serve hot.
