A quick and flavorful one-pan meal featuring tender chicken, cheesy rotini pasta, and a spicy Cajun kick.

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup rotini pasta
- 1/2 cup shredded cheddar cheese
- 1/4 cup shredded Monterey Jack cheese
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Add garlic, Cajun seasoning, smoked paprika, and cayenne pepper (if using) and cook for 1 minute until fragrant.
- Stir in diced tomatoes and chicken broth. Bring to a simmer.
- Add rotini pasta to the skillet. Cover and cook for 12-15 minutes, or until pasta is al dente, stirring occasionally.
- Return chicken to the skillet. Stir in cheddar cheese and Monterey Jack cheese until melted and creamy.
- Season with salt and black pepper to taste.
- Serve hot.
Notes
- For extra spice, increase the cayenne pepper.
- You can add other vegetables like bell peppers or corn.
- For a creamier sauce, stir in a tablespoon of heavy cream at the end.
