Ingredients

  • 4 large apples (such as Honeycrisp or Gala)
  • 4 ounces cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup crushed graham crackers
  • 2 tablespoons melted butter
  • 1/4 teaspoon cinnamon
  • Pinch of nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Core apples, leaving about 1/2 inch at the bottom.
  3. In a small bowl, mix softened cream cheese, sugar, and vanilla extract until smooth.
  4. In another small bowl, combine crushed graham crackers, melted butter, cinnamon, and nutmeg.
  5. Fill each apple cavity with the cream cheese mixture.
  6. Top the cream cheese mixture with the graham cracker topping.
  7. Place apples in a baking dish and add about 1/4 inch of water to the bottom of the dish.
  8. Bake for 30-40 minutes, or until apples are tender.
  9. Let cool slightly before serving.
