- 1 cup all-purpose flour
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1/4 cup chopped walnuts (optional)
- Fresh berries for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
- In a large bowl, beat the eggs and granulated sugar until pale and fluffy.
- Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the egg mixture, mixing until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
- While the cake cools, whip the heavy cream with powdered sugar until stiff peaks form.
- Once the cake is completely cool, slice it horizontally into two layers.
- Spread half of the whipped cream over the bottom layer of the cake.
- Place the top layer of the cake over the cream.
- Frost the top and sides of the cake with the remaining whipped cream.
- Decorate with chopped walnuts and fresh berries, if desired.
- Chill the cake for at least 1 hour before serving.
