Instructions
- Preheat oven to 375°F (190°C).
- Press the pie crust into a 9-inch pie dish.
- Heat olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until softened, about 10 minutes.
- Add water to the skillet, reduce heat to low, and continue to cook, stirring occasionally, until onions are deeply browned and caramelized, about 20-25 minutes.
- Spread the caramelized onions evenly over the bottom of the pie crust.
- Sprinkle the crumbled goat cheese over the onions.
- In a medium bowl, whisk together the eggs, heavy cream, salt, and pepper.
- Pour the egg mixture over the onions and goat cheese in the pie crust.
- Bake for 35-45 minutes, or until the center is set and the top is golden brown.
- Let cool slightly before slicing and serving.

- You can use yellow or red onions for this recipe.
