Description

Simple bars with a shortbread crust, pecan filling, and a caramel topping.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup packed light brown sugar
  • 1/2 cup light corn syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1/2 cup caramel sauce

Instructions

  1. Preheat your oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
  2. Prepare the crust: In a medium bowl, combine the flour, cold butter, granulated sugar, and salt. Use your fingers or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake for 15 minutes.
  4. While the crust bakes, prepare the filling: In a separate bowl, whisk together the brown sugar, corn syrup, eggs, and vanilla extract until smooth.
  5. Stir in the chopped pecans.
  6. Pour the pecan mixture over the warm, pre-baked crust.
  7. Return the pan to the oven and bake for 25 to 30 minutes, or until the filling is set.
  8. Remove from the oven and immediately drizzle the caramel sauce evenly over the top.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
  10. Cut into squares.

Notes

  • You can use store-bought caramel sauce for convenience.
  • For cleaner cuts, chill the cooled bars for 30 minutes before slicing.
