Caramel Cheesecake Cookie Stacks are layered cookie desserts with chocolate ganache, cheesecake filling, and caramel topping. Perfect for parties, birthdays, or when you want to wow your guests with a gooey, rich, homemade treat.

- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups semi-sweet chocolate chips (plus extra for topping)
- 2 (8 oz) blocks cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup heavy cream or 1 cup whipped topping
- 1 cup semi-sweet chocolate chips or chunks (for ganache)
- 1/2 cup heavy cream (for ganache)
- 20 soft caramels
- 2 tbsp heavy cream (for caramel drizzle)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter, brown sugar, and white sugar until fluffy.
- Add eggs and vanilla, mix well.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually add to wet mixture.
- Stir in chocolate chips.
- Scoop dough into 2-tbsp portions, slightly flatten, and bake 10–12 minutes.
- Cool cookies on a wire rack.
- Beat cream cheese until smooth, then add powdered sugar and vanilla. Fold in heavy cream or whipped topping. Chill 30 minutes.
- Heat 1/2 cup cream until just simmering and pour over 1 cup chocolate. Let sit 2–3 minutes, then stir to form ganache.
- Assemble stacks: spread ganache on one cookie, top with another, add cheesecake filling, and finish with a third cookie.
- Melt caramels with 2 tbsp heavy cream over low heat, drizzle over top cookie, and sprinkle with extra chocolate chips.
Notes
- Chill cookie dough for 30 minutes for extra chewy cookies.
- Use piping bags for clean layers during assembly.
- Store assembled stacks in the fridge for up to 4 days.
- Add flaky sea salt for a sweet-and-salty twist.
