Description

Caramel Cheesecake Cookie Stacks are layered cookie desserts with chocolate ganache, cheesecake filling, and caramel topping. Perfect for parties, birthdays, or when you want to wow your guests with a gooey, rich, homemade treat.

  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semi-sweet chocolate chips (plus extra for topping)
  • 2 (8 oz) blocks cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream or 1 cup whipped topping
  • 1 cup semi-sweet chocolate chips or chunks (for ganache)
  • 1/2 cup heavy cream (for ganache)
  • 20 soft caramels
  • 2 tbsp heavy cream (for caramel drizzle)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter, brown sugar, and white sugar until fluffy.
  3. Add eggs and vanilla, mix well.
  4. In a separate bowl, whisk flour, baking soda, and salt. Gradually add to wet mixture.
  5. Stir in chocolate chips.
  6. Scoop dough into 2-tbsp portions, slightly flatten, and bake 10–12 minutes.
  7. Cool cookies on a wire rack.
  8. Beat cream cheese until smooth, then add powdered sugar and vanilla. Fold in heavy cream or whipped topping. Chill 30 minutes.
  9. Heat 1/2 cup cream until just simmering and pour over 1 cup chocolate. Let sit 2–3 minutes, then stir to form ganache.
  10. Assemble stacks: spread ganache on one cookie, top with another, add cheesecake filling, and finish with a third cookie.
  11. Melt caramels with 2 tbsp heavy cream over low heat, drizzle over top cookie, and sprinkle with extra chocolate chips.
