Calamarata Heirloom Pasta with Lemon and Basil

Description

A simple pasta dish featuring Calamarata heirloom pasta tossed with fresh lemon, basil, garlic, and olive oil.


Ingredients

  • 400 g Calamarata heirloom pasta
  • 4 cloves garlic, thinly sliced
  • 1/2 cup fresh basil leaves, chopped
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 1/2 cup extra virgin olive oil
  • 1/4 cup pasta water
  • Salt to taste
  • Black pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-low heat.
  3. Add the sliced garlic to the oil and cook gently until fragrant and lightly golden, about 3-4 minutes. Do not let the garlic burn.
  4. Before draining the pasta, reserve about 1/2 cup of the starchy cooking water.
  5. Drain the pasta and immediately add it to the skillet with the garlic oil.
  6. Add the lemon zest, lemon juice, and about 1/4 cup of the reserved pasta water to the skillet. Toss well to coat the pasta.
  7. Remove the skillet from the heat. Stir in the chopped basil. Add more pasta water if the sauce seems too dry.
  8. Season with salt and black pepper to your taste.
  9. Serve immediately, topping with grated Parmesan cheese if desired.
