Description

A straightforward recipe for creamy Cajun pasta with chicken and shrimp.

Ingredients

Scale
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 pound raw shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 8 ounces penne pasta
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Season chicken and shrimp with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
  4. Add shrimp to the skillet and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
  5. Add onion and bell pepper to the skillet and cook until soft, about 5 minutes.
  6. Stir in garlic and cook for 1 minute until fragrant.
  7. Add diced tomatoes, cream of mushroom soup, and chicken broth to the skillet. Bring to a simmer.
  8. Stir in heavy cream. Reduce heat to low and cook until the sauce thickens slightly.
  9. Return the cooked chicken and shrimp to the skillet. Stir to coat.
  10. Add the cooked pasta to the sauce. Toss everything together until the pasta is well coated.
  11. Taste and add salt and pepper if needed. Serve immediately.

Notes
