  • 1 cup cooked, shredded chicken
  • 1/2 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 4 ears corn, kernels removed
  • 2 tablespoons butter
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 2 tablespoons lime juice
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Toss the shredded chicken with the buffalo sauce in a small bowl. Set aside.
  2. Melt the butter in a large skillet over medium heat. Add the corn kernels and cook until lightly charred, about 5-7 minutes. Remove from heat.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, and lime juice until smooth.
  4. In a large mixing bowl, combine the charred corn, buffalo chicken, red onion, and cilantro.
  5. Pour the mayonnaise mixture over the corn and chicken. Stir gently to coat everything evenly.
  6. Fold in the crumbled cotija cheese.
  7. Season with salt and pepper as needed.
  8. Serve warm or chilled.
