Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil (for chicken)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 12 oz penne or pasta of choice
  • 2 tbsp olive oil (for sautéing)
  • 34 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh chopped basil
  • Juice of 1 lemon (optional)
  • Optional: balsamic glaze for drizzling

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Drain and set aside, reserving 1/2 cup pasta water.
  2. Drizzle chicken with olive oil and season with garlic powder, Italian seasoning, salt, and pepper. Grill over medium-high heat for 5–6 minutes per side until fully cooked. Let rest, then slice.
  3. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  4. Add cherry tomatoes, salt, and red pepper flakes if using. Cook for 5–7 minutes until tomatoes are softened and blistered.
  5. Add cooked pasta to the skillet with the tomato mixture. Stir in Parmesan, basil, and lemon juice. Toss to combine. Add pasta water as needed to loosen the sauce.
  6. Top with sliced grilled chicken. Drizzle with balsamic glaze and garnish with more basil and Parmesan if desired. Serve warm.
