- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/4 cup dark rum
- 1 (15 ounce) can crushed pineapple, drained
- 1/4 cup maraschino cherries
Instructions
- Preheat oven to 350°F (175°C).
- In a small bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together butter and 1 cup of the brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract and 1/2 cup rum.
- Gradually add the dry ingredients to the wet ingredients, alternating with the reserved pineapple juice, beginning and ending with dry ingredients. Mix until just combined.
- Pour batter into a greased and floured 9×13 inch baking pan.
- Arrange drained pineapple slices over the batter.
- Place maraschino cherries in the center of each pineapple ring.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before inverting onto a serving platter.

- Ensure pineapple slices are well-drained to prevent a soggy bottom.
- Adjust rum quantity to your preference.
