							Scale

			- 4–6 uncooked bratwurst sausages
 - 1 tablespoon oil (for stovetop cooking)
 - 1 cup beer (optional, for simmering)
 - 1 red bell pepper, sliced
 - 1 yellow bell pepper, sliced
 - 1 orange bell pepper, sliced
 - 1 large yellow or sweet onion, thinly sliced
 - 1 tablespoon olive oil or butter
 - Salt and pepper to taste
 - Optional: garlic powder or crushed red pepper flakes
 - 4–6 hot dog or hoagie buns, lightly toasted
 - Optional toppings: spicy mustard, sauerkraut, shredded cheese, pickles

Instructions
- Preheat your grill to medium heat (350–375°F), or heat oil in a skillet over medium-high heat for stovetop method.
 - Optional: Simmer bratwurst in a pan with 1 cup beer or water for 10–15 minutes to infuse flavor and precook.
 - Transfer brats to grill or skillet. Cook 5–7 minutes, turning occasionally, until browned and internal temp reaches 160°F. Let rest.
 - In a skillet, heat 1 tablespoon oil or butter. Add sliced peppers and onions with a pinch of salt and pepper.
 - Sauté 12–15 minutes over medium heat, stirring occasionally, until vegetables are soft and caramelized. Add garlic powder or pepper flakes if desired.
 - Toast buns lightly on grill or in a pan until golden.
 - Place each brat in a bun, top with a generous spoonful of sautéed peppers and onions, and add your favorite toppings.

Notes
- Simmering brats in beer before grilling keeps them juicy and adds flavor.
 - Don’t pierce the brats while cooking to retain juices.
 - Use a meat thermometer to ensure brats reach 160°F internally.
 - Peppers and onions can be made up to 2 days ahead and reheated before serving.
 - Great for meal prep or crowd-sized servings—just scale up ingredients as needed.
