  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup finely chopped onion
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup bourbon
  • 1/2 cup BBQ sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 pound bacon, cooked and crumbled
  • 8 slices cheddar cheese
  • 8 sub rolls
  • Butter for toasting

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, Parmesan cheese, salt, and pepper. Mix well.
  3. Form the mixture into 1-inch meatballs.
  4. In a small saucepan, whisk together bourbon, BBQ sauce, brown sugar, and Worcestershire sauce. Bring to a simmer over medium heat.
  5. Add meatballs to the simmering sauce. Cover and cook for 20-25 minutes, or until meatballs are cooked through.
  6. Slice sub rolls lengthwise and butter the cut sides. Toast under the broiler or in a skillet until golden brown.
  7. Place 2-3 meatballs on the bottom half of each sub roll.
  8. Top each sub with a slice of cheddar cheese and crumbled bacon.
  9. Place the subs on a baking sheet and bake for 5-7 minutes, or until the cheese is melted.
