- 1 box yellow cake mix
- Ingredients for cake mix (eggs, oil, water)
- 1/2 cup butter
- 1 cup milk
- 1/2 cup sugar
- 1/4 cup cornstarch
- 4 egg yolks
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1/4 cup chopped pecans
- 1/4 cup red and green sprinkles
Instructions
- Prepare and bake yellow cake according to package directions. Let cool.
- While cake cools, prepare pastry cream: In a saucepan, melt butter. Whisk in milk, sugar, cornstarch, and egg yolks. Cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in vanilla. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill completely.
- Once cake is cool, slice it horizontally into two layers.
- Spread a generous layer of pastry cream over the bottom cake layer.
- Whip heavy cream with powdered sugar until stiff peaks form.
- Spread whipped cream over the pastry cream.
- Place the second cake layer on top.
- Frost the entire cake with remaining whipped cream.
- Decorate with chopped pecans, red and green sprinkles.
Notes
- Chill the cake for at least 1 hour before slicing for easier handling.
- You can add a touch of peppermint extract to the whipped cream for a minty Christmas flavor.
- Store any leftover cake in the refrigerator.
