Description

Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 2 tablespoons butter
  • Sour cream for serving

Instructions

  1. Combine flour and salt in a bowl.
  2. Whisk egg and water together.
  3. Gradually add wet ingredients to dry ingredients, mixing until a dough forms.
  4. Knead dough on a floured surface for 5 minutes.
  5. Cover and let rest for 30 minutes.
  6. In a separate bowl, gently mix blueberries, sugar, cornstarch, and lemon zest.
  7. Roll out dough thinly.
  8. Cut out circles using a glass.
  9. Place a spoonful of blueberry filling on half of each circle.
  10. Fold dough over filling and crimp edges to seal.
  11. Boil pierogi in salted water for 3-5 minutes, or until they float.
  12. Drain pierogi.
  13. Melt butter in a pan and lightly fry pierogi until golden brown.
  14. Serve warm with sour cream.

Notes

  • For a richer dough, you can substitute milk for water.
