Description
Delicious homemade pierogi filled with sweet blueberries and served with a dollop of sour cream.
Ingredients

- 2 cups all-purpose flour
- 1 large egg
- 1/2 cup water
- 1/4 teaspoon salt
- 2 cups fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon zest
- 2 tablespoons butter
- Sour cream for serving
Instructions
- Combine flour and salt in a bowl.
- Whisk egg and water together.
- Gradually add wet ingredients to dry ingredients, mixing until a dough forms.
- Knead dough on a floured surface for 5 minutes.
- Cover and let rest for 30 minutes.
- In a separate bowl, gently mix blueberries, sugar, cornstarch, and lemon zest.
- Roll out dough thinly.
- Cut out circles using a glass.
- Place a spoonful of blueberry filling on half of each circle.
- Fold dough over filling and crimp edges to seal.
- Boil pierogi in salted water for 3-5 minutes, or until they float.
- Drain pierogi.
- Melt butter in a pan and lightly fry pierogi until golden brown.
- Serve warm with sour cream.
Notes
- For a richer dough, you can substitute milk for water.
- Adjust sugar to your preference.
- You can also bake the pierogi for a healthier option.
