Ingredients

  • 1 pre-made tart crust
  • 1 cup fresh blueberries
  • 1/2 cup granulated sugar
  • 1/4 cup lemon juice
  • 2 large eggs
  • 1/4 cup unsalted butter, cut into cubes
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, combine blueberries, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and blueberries soften, about 5-7 minutes.
  3. Remove from heat. In a separate bowl, whisk the eggs. Gradually whisk about half of the hot blueberry mixture into the eggs to temper them.
  4. Pour the tempered egg mixture back into the saucepan with the remaining blueberry mixture.
  5. Return the saucepan to medium-low heat and cook, stirring constantly, until the curd thickens enough to coat the back of a spoon, about 5-8 minutes. Do not boil.
  6. Remove from heat and stir in the butter and lemon zest until the butter is fully melted and incorporated.
  7. Pour the lemon curd into the pre-made tart crust.
  8. Bake for 15-20 minutes, or until the filling is set.
  9. Let the tart cool completely on a wire rack before slicing and serving.
