A calming and refreshing non-alcoholic drink with blueberry, lavender, and chamomile flavors.


Ingredients

  • 1 cup fresh blueberries
  • 1 cup brewed chamomile tea, chilled
  • 1/4 cup dried culinary lavender buds
  • 1/4 cup water
  • 2 tablespoons honey or agave nectar
  • 1 tablespoon lemon juice
  • Sparkling water, to top
  • Fresh mint sprigs, for garnish

Instructions

  1. Steep the lavender buds in hot water for 10 minutes. Strain and discard the buds. Let the lavender infusion cool.
  2. In a small saucepan, combine the blueberries, 1/4 cup water, and honey or agave nectar. Cook over medium heat until the blueberries burst and the mixture thickens slightly, about 5-7 minutes. Mash the blueberries.
  3. Strain the blueberry mixture through a fine-mesh sieve, pressing to extract as much liquid as possible. Discard the solids.
  4. In a pitcher, combine the blueberry puree, chilled chamomile tea, lavender infusion, and lemon juice. Stir well.
  5. To serve, fill glasses with ice. Pour the mocktail mixture into each glass, filling about halfway.
  6. Top with sparkling water.
  7. Garnish with fresh mint sprigs.
