A refreshing, non-alcoholic drink featuring blueberry, ginger, and lime flavors.
Ingredients

- 1 cup fresh or frozen blueberries
- 1 inch fresh ginger, peeled and thinly sliced
- 1/2 cup fresh lime juice
- 1/4 cup simple syrup
- 4 cups sparkling water or club soda
- Lime wheels for garnish
- Ice cubes
Instructions
- Combine blueberries, ginger slices, lime juice, and simple syrup in a small saucepan.
- Heat the mixture over medium heat, stirring occasionally, until it simmers and the blueberries start to break down (about 5 minutes).
- Remove from heat and let the mixture steep for 15 minutes.
- Strain the mixture through a fine-mesh sieve into a bowl, pressing on the solids to extract all liquid. Discard the solids. This is your syrup base.
- To serve, fill glasses with ice. Add 2-3 tablespoons of the blueberry ginger lime syrup base to each glass.
- Top each glass with sparkling water or club soda.
- Stir gently and garnish with a lime wheel.
Notes
- To make simple syrup, combine equal parts sugar and water and heat until sugar dissolves. Cool before using.
- For a stronger ginger flavor, steep the ginger longer in the syrup base.
- You can prepare the syrup base up to three days ahead and store it in the refrigerator.
