Description

Easy to make blueberry crumble bars with a buttery oat topping and a sweet blueberry filling.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 cups fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
  2. In a medium bowl, combine flour, oats, brown sugar, baking soda, and salt.
  3. Pour melted butter over the dry ingredients and mix until combined.
  4. Press half of the oat mixture into the bottom of the prepared pan.
  5. In a separate bowl, toss blueberries with lemon juice, granulated sugar, and cornstarch.
  6. Spread the blueberry mixture evenly over the oat crust.
  7. Sprinkle the remaining oat mixture over the blueberries.
  8. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let cool completely before cutting into bars.

Notes

  • For a firmer bar, chill the pan for 15 minutes before baking.
  • You can add a pinch of cinnamon to the oat mixture for extra flavor.
  • These bars store well in an airtight container at room temperature for up to 3 days.
