Description
Easy to make blueberry crumble bars with a buttery oat topping and a sweet blueberry filling.
Ingredients

- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, melted
- 2 cups fresh or frozen blueberries
- 1 tablespoon lemon juice
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
Instructions
- Preheat your oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
- In a medium bowl, combine flour, oats, brown sugar, baking soda, and salt.
- Pour melted butter over the dry ingredients and mix until combined.
- Press half of the oat mixture into the bottom of the prepared pan.
- In a separate bowl, toss blueberries with lemon juice, granulated sugar, and cornstarch.
- Spread the blueberry mixture evenly over the oat crust.
- Sprinkle the remaining oat mixture over the blueberries.
- Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool completely before cutting into bars.
Notes
- For a firmer bar, chill the pan for 15 minutes before baking.
- You can add a pinch of cinnamon to the oat mixture for extra flavor.
- These bars store well in an airtight container at room temperature for up to 3 days.
