Ingredients

  • 1 box blue velvet cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 1/4 cups water
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups crushed Oreo cookies
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups confectioners’ sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
  2. Prepare cake mix according to package directions using eggs, oil, and water. Pour batter evenly into prepared pans.
  3. Bake in the preheated oven for 28 to 32 minutes, or until a wooden skewer inserted into the center comes out clean. Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
  4. While cakes cool, prepare the cheesecake layer. Beat together 2 packages of softened cream cheese, white sugar, and 1 teaspoon vanilla extract until smooth. Beat in 2 large eggs, one at a time. Fold in crushed Oreo cookies.
  5. Pour cheesecake mixture into a greased and floured 9-inch springform pan.
  6. Bake in the preheated oven for 45 to 55 minutes, or until the center is set. Let cool completely on a wire rack.
  7. Prepare the cream cheese frosting. Beat together 1 package softened cream cheese and softened butter until smooth. Gradually beat in confectioners’ sugar until smooth and creamy. Stir in 1 teaspoon vanilla extract.
  8. To assemble, place one blue velvet cake layer on a serving plate. Carefully place the cooled Oreo cheesecake layer on top of the cake layer. Top with the second blue velvet cake layer. Frost the entire cake with cream cheese frosting.
  9. Chill for at least 2 hours before serving.
