Ingredients

- 2 boneless, skinless chicken breasts
- 1 tbsp blackening seasoning
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 4 slices provolone cheese
- 2 hoagie rolls
Instructions
- Season chicken breasts with blackening seasoning.
- Heat olive oil in a pan over medium-high heat.
- Cook chicken for 5-6 minutes per side until blackened and cooked through.
- Remove chicken and slice thinly.
- In the same pan, sauté bell pepper and onion until soft.
- Add sliced chicken back to the pan.
- Place cheese slices on top and let melt.
- Divide mixture between hoagie rolls and serve.
