Ingredients

  • 2 large eggs
  • 1 cup milk

  • 1 1/2 cups fresh blackberries
  • For the Streusel:
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup (1/2 stick) cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Add the softened butter and mix with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the eggs, milk, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  6. Gently fold in the fresh blackberries.
  7. Prepare the streusel: In a small bowl, combine the flour and brown sugar. Cut in the cold butter until the mixture forms coarse crumbs.
  8. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  9. Sprinkle the streusel topping generously over the batter in each cup.
  10. Bake for 20-25 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  11. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra burst of flavor, you can add a teaspoon of lemon zest to the muffin batter.
  • If you don’t have fresh blackberries, frozen ones can be used, but do not thaw them before adding to the batter.
