- 4 cups fresh blackberries
- 3/4 cup granulated sugar (for filling)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- 1 cup all-purpose flour
- 1 cup granulated sugar (for batter, divided in half)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 6 tablespoons unsalted butter, melted
- Extra blackberries for topping (optional)
- Turbinado or raw sugar for sprinkling
Instructions
- Preheat oven to 375°F (190°C).
- In a medium bowl, mix blackberries, 3/4 cup sugar, lemon juice, cornstarch, vanilla extract, and cinnamon. Set aside to macerate.
- In another bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
- Stir in milk and melted butter until a smooth, pourable batter forms. Do not overmix.
- Grease an 8×8 or 9×9-inch baking dish and pour the batter into it.
- Spoon the blackberry mixture evenly over the batter. Do not stir.
- Optional: press extra blackberries into the top and sprinkle with coarse sugar.
- Bake uncovered for 40–45 minutes, until golden brown and bubbly.
- Let cool for 15–20 minutes before serving.
Notes
- Use frozen blackberries if fresh aren’t available; don’t thaw them first.
- Let the cobbler rest after baking to allow the filling to set.
- For extra crunch, sprinkle turbinado sugar on top before baking.
- Can be served with ice cream, whipped cream, or even yogurt.
- Double the recipe for a crowd using a 9×13 dish and adjust baking time.
