  • 1 cup granulated sugar (for batter, divided in half)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 6 tablespoons unsalted butter, melted
  • Extra blackberries for topping (optional)
  • Turbinado or raw sugar for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, mix blackberries, 3/4 cup sugar, lemon juice, cornstarch, vanilla extract, and cinnamon. Set aside to macerate.
  3. In another bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
  4. Stir in milk and melted butter until a smooth, pourable batter forms. Do not overmix.
  5. Grease an 8×8 or 9×9-inch baking dish and pour the batter into it.
  6. Spoon the blackberry mixture evenly over the batter. Do not stir.
  7. Optional: press extra blackberries into the top and sprinkle with coarse sugar.
  8. Bake uncovered for 40–45 minutes, until golden brown and bubbly.
  9. Let cool for 15–20 minutes before serving.

Notes

  • Use frozen blackberries if fresh aren’t available; don’t thaw them first.
  • Let the cobbler rest after baking to allow the filling to set.
  • For extra crunch, sprinkle turbinado sugar on top before baking.
  • Can be served with ice cream, whipped cream, or even yogurt.
