A rich and decadent Black Forest cheesecake, perfect for Christmas celebrations.

- 1 ½ cups chocolate cookie crumbs
- ¼ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 3 (8-ounce) packages cream cheese, softened
- 1 ¼ cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
- ½ cup chopped maraschino cherries, drained
- ¼ cup kirsch (cherry liqueur)
- 2 cups fresh or frozen pitted cherries
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- Whipped cream, for topping
- Chocolate shavings, for topping
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine cookie crumbs, melted butter, and 2 tablespoons sugar. Press onto the bottom of a 9-inch springform pan.
- Bake for 8-10 minutes. Let cool.
- In a large bowl, beat cream cheese and 1 ¼ cups sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract and sour cream.
- Stir in chopped maraschino cherries and kirsch.
- Pour filling over the crust.
- Bake for 50-60 minutes, or until the center is almost set.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove from oven and cool completely on a wire rack.
- Refrigerate for at least 4 hours, or preferably overnight.
- Meanwhile, in a saucepan, combine cherries, ¼ cup sugar, cornstarch, and lemon juice.
- Cook over medium heat, stirring constantly, until thickened. Let cool.
- Spoon cherry topping over the cheesecake before serving.
- Top with whipped cream and chocolate shavings.
Notes
- Ensure cream cheese is at room temperature for a smooth filling.
- Do not overmix the batter after adding eggs.
- Allow the cheesecake to cool gradually to prevent cracking.
- For a non-alcoholic version, omit the kirsch and use cherry juice instead.
