- 1 cup frozen corn kernels, thawed
- 1/2 cup chopped red onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the black-eyed peas, corn, red onion, green bell pepper, red bell pepper, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper.
- Pour the dressing over the black-eyed pea mixture and stir to combine.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve cold with tortilla chips or as a side dish.
Notes
- You can add other vegetables like diced tomatoes, jicama, or avocado.
- Adjust the amount of lime juice and spices to your preference.
- This dish is best when the flavors have had time to meld.
