Description
Big Boy’s Fresh Strawberry Pie is a nostalgic, easy-to-make dessert with a flaky crust, juicy strawberries, and glossy glaze.
Ingredients
Scale
- 1 pre-baked 9-inch pie crust (homemade or store-bought)
- 1 cup granulated sugar
- 3 tbsp cornstarch
- 1 cup water
- 1 box (3 oz) strawberry-flavored gelatin (like Jell-O)
- 1½ lbs fresh strawberries, hulled and halved
- Whipped cream, for serving (optional)
Instructions
- Bake your pie crust according to package or recipe instructions. Let it cool completely.
- In a medium saucepan, whisk together sugar and cornstarch. Stir in water and bring to a boil over medium heat, whisking constantly.
- Once the mixture thickens (about 3–5 minutes), remove from heat and stir in strawberry gelatin until fully dissolved.
- Allow the mixture to cool for 10–15 minutes until slightly thickened but still pourable.
- Arrange the fresh strawberries in the cooled pie crust, filling it evenly.
- Pour the gelatin mixture over the strawberries, covering them completely.
- Refrigerate the pie for at least 4 hours or until fully set.
- Top with whipped cream before serving, if desired.
Notes
- Use ripe, fresh strawberries for the best flavor and texture.
- To save time, you can use a store-bought crust or graham cracker crust.
- Chill the pie thoroughly before slicing for clean, firm pieces.
- Add extra whole strawberries on top for a decorative finish.
- This pie is best enjoyed within 2 days for peak freshness.
