Description
A simple recipe for vegan gnocchi served with a rich, meaty tomato sauce made from plant-based grounds.

- 1 pound potato gnocchi
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 8 ounces vegan ground meat substitute
- 1 (28 ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Add vegan ground meat substitute to the skillet. Cook, breaking it up with a spoon, until browned, about 5 to 7 minutes.
- Stir in crushed tomatoes, oregano, basil, and red pepper flakes if using. Season with salt and pepper.
- Bring the sauce to a simmer, then reduce heat to low, cover, and cook for 15 minutes, stirring occasionally.
- While the sauce simmers, cook the gnocchi according to package directions. Drain well.
- Add the cooked gnocchi directly to the skillet with the sauce. Toss gently to coat.
- Serve immediately, garnished with fresh parsley.
Notes
- For a thicker sauce, simmer uncovered for an extra 5 minutes after adding tomatoes.
- You can substitute dried herbs with 1 tablespoon of Italian seasoning blend.
- If you do not have vegan ground meat, finely crumbled firm tofu can work as a substitute.
