A simple recipe for vegan gnocchi served with a rich, meaty tomato sauce made from plant-based grounds.


Ingredients

  • 1 pound potato gnocchi
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces vegan ground meat substitute
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add vegan ground meat substitute to the skillet. Cook, breaking it up with a spoon, until browned, about 5 to 7 minutes.
  4. Stir in crushed tomatoes, oregano, basil, and red pepper flakes if using. Season with salt and pepper.
  5. Bring the sauce to a simmer, then reduce heat to low, cover, and cook for 15 minutes, stirring occasionally.
  6. While the sauce simmers, cook the gnocchi according to package directions. Drain well.
  7. Add the cooked gnocchi directly to the skillet with the sauce. Toss gently to coat.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • For a thicker sauce, simmer uncovered for an extra 5 minutes after adding tomatoes.
  • You can substitute dried herbs with 1 tablespoon of Italian seasoning blend.
  • If you do not have vegan ground meat, finely crumbled firm tofu can work as a substitute.
