Ingredients

  • 3 cups cooked rice, cold
  • 2 tablespoons vegetable oil
  • 2 large eggs, lightly beaten
  • 1/2 cup frozen peas and carrots
  • 2 green onions, thinly sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Pour in the beaten eggs and scramble until cooked. Remove eggs from skillet and set aside.
  3. Add frozen peas and carrots to the skillet and stir-fry for 2 minutes.
  4. Add the cold rice to the skillet and break up any clumps. Stir-fry for 3-4 minutes, until heated through.
  5. Return the cooked eggs to the skillet.
  6. Add soy sauce and sesame oil. Stir to combine all ingredients.
  7. Add sliced green onions and stir-fry for another minute.
  8. Serve hot.
