- 3 cups cooked rice, cold
- 2 tablespoons vegetable oil
- 2 large eggs, lightly beaten
- 1/2 cup frozen peas and carrots
- 2 green onions, thinly sliced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Pour in the beaten eggs and scramble until cooked. Remove eggs from skillet and set aside.
- Add frozen peas and carrots to the skillet and stir-fry for 2 minutes.
- Add the cold rice to the skillet and break up any clumps. Stir-fry for 3-4 minutes, until heated through.
- Return the cooked eggs to the skillet.
- Add soy sauce and sesame oil. Stir to combine all ingredients.
- Add sliced green onions and stir-fry for another minute.
- Serve hot.
Notes
- Using cold, day-old rice works best for fried rice.
- Adjust soy sauce to your taste.
- You can add other vegetables or cooked protein if desired.
