- 1 lb beef stew meat, cubed
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tbsp paprika
- 1 tsp caraway seeds
- 1 red bell pepper, diced
- 2 large potatoes, peeled and cubed
- 2 carrots, sliced
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
Instructions
- Heat oil in a large pot over medium heat. Add beef and brown on all sides. Remove and set aside.
- In the same pot, sauté onions and garlic until soft.
- Stir in paprika and caraway seeds, cooking for 1 minute.
- Add bell pepper, potatoes, and carrots. Cook for 5 minutes.
- Return the beef to the pot. Pour in beef broth and stir in tomato paste.
- Add salt, pepper, and bay leaf. Bring to a boil.
- Reduce heat, cover, and simmer for 1.5 hours or until beef is tender.
- Remove bay leaf before serving.
Notes
- For extra flavor, add a splash of red wine.
- Serve with crusty bread or a dollop of sour cream.
- Leftovers taste even better the next day.
