Ingredients

- 1 lb beef stew meat, cubed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tbsp sweet paprika
- 1 red bell pepper, diced
- 2 medium carrots, sliced
- 2 medium potatoes, cubed
- 3 cups beef broth
- 1 tbsp tomato paste
- 1 tsp caraway seeds
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add onions and sauté until translucent.
- Stir in garlic and beef, browning the meat evenly.
- Sprinkle paprika and caraway seeds, then mix well.
- Add bell pepper, carrots, and potatoes, stirring for 2 minutes.
- Pour in beef broth and tomato paste, bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 hours.
- Season with salt and pepper, serve hot.
Notes
- For extra richness, add a splash of red wine.
- Serve with crusty bread or dumplings.
