Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the sugar and butter until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a small bowl, whisk together the buttermilk and lemon juice.
- Add the dry ingredients to the wet ingredients alternately with the buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Stir in the lemon zest.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- For the frosting: In a large bowl, beat together the softened butter and powdered sugar until smooth.
- Beat in the lemon juice and milk until the frosting is light and fluffy.
- Frost the cooled cupcakes.
