  • 1 cup pumpkin puree (canned or homemade)
  • 1/3 cup breadcrumbs (panko or regular)
  • 1/4 cup finely chopped onion
  • 1 garlic clove, minced
  • 1 egg
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried thyme or oregano
  • Pinch of cayenne pepper (optional)

Instructions

  1. In a large bowl, combine ground beef, pumpkin puree, breadcrumbs, onion, garlic, egg, Worcestershire sauce, and seasonings.
  2. Mix until just combined without overworking the meat.
  3. Shape into 6 medium-sized patties, about 3-4 inches wide and 1/2 inch thick.
  4. Optional: chill patties in the fridge for 10–15 minutes to help them hold shape.
  5. To pan-fry: heat 1–2 tbsp oil in a skillet over medium heat. Cook patties 4–5 minutes per side until browned and cooked through.
  6. To grill: preheat grill, oil the grates, and cook over medium heat for 4 minutes per side.
  7. To bake: preheat oven to 375°F (190°C), place patties on a lined baking sheet, and bake for 20–25 minutes, flipping halfway.
  8. Serve hot with your choice of sides or in a bun, salad, or grain bowl.

  • Don’t overmix the meat to avoid tough patties.
  • Add more breadcrumbs if the mixture feels too soft.
  • Resting the mixture before cooking helps the patties firm up.
