Smoky BBQ chicken and melted cheese grilled in tortillas.
Ingredients

- 2 cups cooked chicken, shredded
- 1/2 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 flour tortillas (8-inch)
- Butter or oil for cooking
Instructions
- In a bowl, combine shredded chicken and BBQ sauce.
- Lay out four tortillas. Sprinkle half of each cheese blend over each tortilla.
- Spread the chicken mixture evenly over the cheese on the four tortillas.
- Top with the remaining cheese.
- Place the remaining four tortillas on top to create quesadillas.
- Heat a large skillet or griddle over medium heat. Add butter or oil.
- Carefully transfer quesadillas to the hot skillet. Cook for 3-4 minutes per side, or until golden brown and cheese is melted.
- Remove from skillet, let cool slightly, and cut into wedges.
- Serve warm.
Notes
- Use leftover rotisserie chicken for convenience.
- Adjust the amount of BBQ sauce to your preference.
- Add sautéed onions or peppers for extra flavor.
