Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 flour tortillas (8-inch)
  • Butter or oil for cooking

Instructions

  1. In a bowl, combine shredded chicken and BBQ sauce.
  2. Lay out four tortillas. Sprinkle half of each cheese blend over each tortilla.
  3. Spread the chicken mixture evenly over the cheese on the four tortillas.
  4. Top with the remaining cheese.
  5. Place the remaining four tortillas on top to create quesadillas.
  6. Heat a large skillet or griddle over medium heat. Add butter or oil.
  7. Carefully transfer quesadillas to the hot skillet. Cook for 3-4 minutes per side, or until golden brown and cheese is melted.
  8. Remove from skillet, let cool slightly, and cut into wedges.
  9. Serve warm.
